As always, I would travel across the land in order to find the best ramen creation. This time, it is all about the hottest Hakata-style ramen with intensely strong pork broth and truffle oil, Kanshoku Ramen. Despite the fact it is still new in Orchard area, they have captured a lot of crowd during meal time and the weekend. According to TripAdvisor Singapore, this venue is must-visit by gaining 4.00 out of 5.00 votes. But from us, this venue deserves a slightly higher vote like 4.25 out 5.00, maybe?
Owned by the Melvin Ang who passionate in Japanese noodle dishes, each bowl in Kanshoku Ramen show a certain level of quality and quantity as well. All ingredients including noodles, pork broth, and perfectly cooked egg are absolutely handmade daily to ensure the freshness and juiciness remain there whenever customer taste it. To what extent, that pork broth has been cooked over 7 hours without adding MSG or any preservatives.
Tucked away in ION Orchard, this venue is recently opened a couple months ago. With minimalist interior design and simple table settings, guest can move freely without any hesitation since the spacing between each table is quite big. If you love to smell the nicely cooked noodle or even an aromatic truffle dishes, just find your sit at the bar counter. Do ask the staff for more assistance if you got confused. The staff here is quite friendly and responsive as well.
Start with the signature menu collection called Truffle Ramen Dry (S$ 16.90). Featuring the ultra-springy noodle and tender pieces of charsiu, bathed in rich yet creamy pork broth. It's smooth, fragrant, and unbelievably flavourful. That meat is the real winner here with a thick layer of fats at the edges and juicy pieces of meat all around the circle. Also, the noodle itself is so aromatic. I just love the strong truffle aroma like never existed before. Do ask for additional Ajitama Egg (S$ 2.00) for the best experience.
Flaming Hot Tonkotsu Ramen (S$ 14.90) is seriously amazing. The noodle got a silky texture to it while the soup is intensely spicy. I love the numbing flavor of it when sipping that soup. Also, that pieces of charsiu have absorbed all the richness of that broth. Spicy food fanatic, this one is yours.
Still not enough? Just have a plate of Gyoza (S$ 5.90 / Black Plate / Menya Musashi / Nantsuttei OG) or Truffle Edamame (S$ 6.90). It's simple, fresh, and just aromatic. Kind of subtle to be paired with that noodle. Because this finger food is quite salty for my liking.
For the beverages, they do serve you a free flow Iced Water for any meal purchased. Just find your seat first and quench your thirst immediately.
Kanshoku Ramen is one of the best ramen house in Singapore. Innovative food, warm ambiance, and responsive service are what to expect here. Give it a try for Flaming Hot Tonkotsu Ramen if you are a spicy food fanatic or Truffle Dry Ramen for a unique flavor.
