Established in 1986 in Japan's ramen capital of Hakata by Shigemi Kawahara, IPPUDO has become the most popular ramen restaurant within the territory. Currently, they are having 80 outlets across Japan, 8 outlets in Singapore, and over 40 more outlets worldwide. What set difference between IPPUDO and any other ramen is their signature thin noodle and creamy Tonkotsu broth like no other. All process is handmade start by picking the rigorously selected ingredients, slow cooking broth, creating a vibrant noodle strand until finalizing the platting for each bowl of ramen. Tucked away in River Valley Road exactly at Mohamed Sultan, this venue is always packed with people. During the weekday, the huge amount of crowd comes from office worker and students. The ratio might be 70:30 since the area is kind of close with the Fraser Residence, UBER Office, The University of Newcastle (UoN) Singapore and DIMENSIONS (City Campus). Meanwhile, on the weekend, usually, the crowd has been dominating by family and tourists. Since the place is kind of strategic to go to National Museum of Singapore or even CHIJMES Singapore.
Stepped inside the restaurant, guest can see a modern Japanese décor with an open kitchen counter and wooden furniture. The staff is quite a lot and very responsive. If you seat close to the kitchen, there is a chance to see the live cooking show, smell the beautiful aroma of perfectly cooked noodle and interact with the chef.
The crowd pleasure menu is Shiromaru Motoaji. The IPPUDO's original creamy tonkotsu broth served with Hakata thin and straight noodles. Together with a row of ultra-tender pork belly and extra tamago egg, the juicy and soft texture of noodle is absolutely here. However, this menu is less salty and taste quite plain somehow. To balanced all the flavor and for extra richness, just add one tablespoon of soy sauce and chili oil.
If you are a spicy food fanatic, Karaka Men is absolutely a must. A hearty combination of springy noodle, spicy soup, ultra-juicy pork belly and poached egg taste absolutely satisfying. The soup seems to be richer than the original version and taste more fragrant. Even the noodle itself has soaked up the richness of that soup and the creaminess of egg yolk. Whenever you start lifting it, all of the beautiful aromas is there and caught you mouthwatering all the time. Definitely brilliant.
Miso Tonkotsu is quite good as well. The noodle is well executed while that soup becomes the best part of that bowl with creamy and thick texture. We still add more chili oil and soy sauce since the flavor seems to be plain.
Still not enough? IPPUDO Singapore also offers you some kind of light bites. Do expect for Salmon Mentai Roll, a juicy and fresh piece of salmon that have been grilled nicely then topped with spicy crab stick mayonnaise is unbelievably delicious. Beef Tataki also interesting since it served cold and fresh.
For the beverage, we do recommend you to try the Hot Tea since it tastes quite nice and authentic or for those who love an alcoholic drink, go try the Asahi Beer that truly refreshing.
Overall, IPPUDO Singapore is absolutely great. We do satisfied with the texture of their signature noodle and creamy Tonkotsu broth. Best menu so far might be Karaka Men and Salmon Mentai Roll that taste really authentic and delicious like no other.
